Light & Lazy Apple and Almond Pie

I came across this easy-peasy, “no flour” wonderful recipe and thought,” This can be a perfect breakfast!”. I made a mental ingredients check list and  realised I had all of them at hand… As they say “You are attractive, I am remarkably attractive…WHY NOT TO…?!”

This is the result of my labour



For a baking tin up to 22 cm

  • Apples (approx. 3 or more)
  • almond flakes
  • 1 egg
  • 50 gr. almond flour
  • 50 gr of fruit sugar (or sugar, if you dont mind)
  • cinnamon
  • cognac, brandy or liqueur (a few drops 🙂

Preheat the oven to 200 degrees.

Beat the egg with sugar to soft peaks. Add almond flour. Mix. Put the dough in the baking tin, previously greased.

Peal the apples and slice them – make the slices as thin as possible. Put a layer of apples slice on the dough, along with almond flakes ( I used quite a lot of flakes, almost as many as apple slices). Sprinkle the layer with “sugar powder” (I make it in the coffee grinder)  or sugar and with a few drops of cognac. I didnt have cognac in the house and used brandy. Start the next layer. You must have at least 3 layers.

Finish with the final layer of almond flakes, sprinkled with “sugar powder” and alcohol (it helps sugar to caramelise).

Bake until the pie becomes golden.Sprinkle with cinnamon before serving.

Did you ever think where the word “breakfast” is coming from?

One day I had an insight (you know one of those days when you feel particularly smart) and realised that this word is coming from Break a Fast. The word author obviously assumed you didnt stop at the kebab shop in the night on your way home from a party! Or at least you didnt eat anything while you were sleeping = you were fasting. Genius, init?!

Please welcome one of my favourite ways to break a fast in style! Start a day with this delicious berry (?), granoly (?!) and creamy cocktail.


  • Frozen strawberries (or any other berries you like)
  • Coconut milk (or yogurt if you wish)
  • Agave nectar
  • oat/granola/mix of grated nuts (to taste;-)
You will also need:
  • a handblender
  • a beautiful tall glass 😉

Take your frozen berries out of the freezer and let them defrost for about an our. Do not let them defrost completely. They must become softer so that you could blend them, but still should not be completely soft. I learned this trick from Tracy Anderson, mine and Gwyneth Paltrow’s personal trainer 😉 .  Using only semi defrosted berries Does make a difference!
Get your agave nectar ready
I love it! It is very nice and guilt-free. Low GI means this nectar won’t affect your blood sugar lever, which is good 😉

Its now time for a coconut milk! I prefer it to the dairy because my organism definitely likes it more than traditional milk products. But it is up to you – feel free use your yogurt!

Now blend the berries with your hand blender.
In a tall glass put layers:
Coconut milk
Oats/granola or crashed nuts
Blended frozen berries
Sprinkle each layer with a few drops of agave. Kiss you second half…

and indulge!


Silver Dollar Almond Pancakes

Obviously, my granny’s pancakes are the best in the world. They are golden, tender, delicate, “holly”:), they melt in your mouth – exactly the way the Russian pancakes should be! 😉

But if you, like me are trying to avoid traditional flour at all costs, you can’t indulge them, can you?… I’ve been looking for the way to still enjoy the pancakes without flour…and found it! Thanks to almond flour, as always!


  1. In a large bowl whisk together eggs, water, vanilla and agave
  2. Add almond flour, salt and baking soda and mix until thoroughly combined
  3. Heat grapeseed oil on skillet over medium low to medium heat
  4. Scoop 1 heaping tablespoon (or tea spoon, if want smaller pancakes) of the pancake mix at a time onto the skillet
  5. Check the pancakes and flip them over in about 30 seconds.  Cook other side
  6. Remove from heat to a plate
  7. Repeat process with remaining mix, add more oil to the pan as needed
They are tender, soft and almondy!
Enjoy with honey or jam!
